LEE KUM KEE

Stir-fried King Prawns with Oyster and Chilli Garlic Sauce

Serves 2-3

Ingredients

450g  raw, unpeeled king prawns
1 clove garlic
red pepper
3 shallots
1 spring onion
2 sticks small tomatoes on the vine
A couple of mint leaves
1 tsp sugar

Method

1 Defrost the prawns in cold water.
2 Make a marinade of the oyster sauce and chilli garlic sauce. Place the defrosted prawns in it.
3 Finely slice the garlic, red peppers, shallots and spring onion. Slice the tomatoes into quarters. The prawns will be marinating nicely in the meantime.
4 Heat the wok or frying pan on a high flame and pour in a dash of oil. Once the oil is hot add the garlic and ¾ of the red pepper and shallots. Stir fry 1 to 2 minutes.
5 Add the prawns and stir fry these another 4 to 5 minutes, until they're nicely pink.
6 Sprinkle with the remaining red pepper, spring onion and mint leaves and, ta-dah! The dish is done!
