Sichuan Grilled Lamb with Cracked Cucumbers & Sesame Soy Sauce

Ingredients

1 rack of lamb sliced into 6 cutlets
2 cloves garlic crushed
1 Tsp sea salt
1 Tsp crushed red chili flakes
4 baby cucumbers
lemon wedges to serve

Method

1 In a medium bowl add the lamb cutlets and the remaining ingredients except the cucumbers. Rub the meat well and refrigerate for 30 minutes covered.
2 Lightly smash the cucumbers with a rolling pin and break them into chunky pieces. Arrange on two plates.
3 Heat a grill pan until smoking hot. Grill the cutlets for 2 minutes each side. Remove and wrap in foil for 5 minutes to rest.
4 Arrange the cutlets over the cucumbers and pour the sesame soy sauce over. Serve with lemon wedges.
