Sweet Potato Burger

Ingredients

½ cup roasted and mashed sweet potato
A drizzle of olive oil
1 cup black beans, drained and rinsed
½ cup corn
1 red bell pepper, finely diced
2 sesame buns

Seasoning

¼ cup bread crumbs
½ tsp garlic powder
½ tsp onion powder
¼ tsp black pepper
½ tsp paprika
1 tsp coriander / parsley
1 tsp salt

Topping

Some spinach
2 slices red onion

Method

1 Preheat oven to 220°C. Peel and chop sweet potatoes, then place on a greased baking sheet.
2 Drizzle with a little olive oil and roast for 40 minutes until soft and cooked through.
3 Let cool and place potatoes into a bowl and roughly mash. Drain and rinse the black beans and add to the bowl with potatoes.
4 Add in the corn, diced red pepper, bread crumbs, garlic powder, onion powder, black pepper, paprika, coriander, salt and Lee Kum Kee Panda Brand Oyster Sauce . Mix well using your hands, form into burger sized patties and set aside.
5 Grill the burgers for 3-5 minutes on each side until crispy, then set aside.
6 Place spinach on the bun, followed by the burger patty, and a few slices of red onion. Feel free to add any other toppings you desire.
PREP TIME: 10 MINUTES | COOKING TIME: 50 MINUTES
