Sesame Fried Eggs with Kale, Fried Garlic & Chilli

Ingredients

2 slices sourdough or other thick bread
1 tbsp vegetable oil
2 eggs
1 tbsp toasted sesame seeds
1 clove garlic sliced
1 small thumb sized chili sliced
100g cavolo nero, stems removed

Method

1 Toast your bread until golden, about 1 minute. Set each piece on a plate.
2 Using a large frying pan, heat until very hot. Add the oil and the eggs. Sprinkle the sesame seeds around the edges of the eggs. Add the garlic and chilis and fry alongside the eggs.
3 After the eggs are set and crispy at the edges, about 3-4 minutes, add the kale and cook until softened, about 1 minute.
4 Place the kale on the toast. Slice the egg on top and sprinkle with the garlic and chili. Drizzle both dishes with the Lee Kum Kee Table Top Sweet Soy Sauce . Crack some black over and sea salt over and serve.
