Gyudon, meaning beef bowl, consists of steamed rice topped with beef and onions. This recipe is a popular one-pot and has an excellent balance of sweet and savoury ingredients.

Ingredients

150g rice
150ml water
100g sliced beef chuck
80g white onion (shredded)
2 tsp minced Ginger
1 Tbsp mirin

Method

1 Place cleaned rice, water and minced ginger into the rice cooker for thorough cooking.
2 Sauté white onion until softened, pour mirin over them and bring to heat, add seasonings in and cook well.
3 Blanch sliced beef chuck then add to the sauce to braise until cooked. This is then ready to serve on cooked rice.

Tips

1 Onion contains a lot of sugar, soaking after shredding helps to prevent it from turning black.
2 Dietician’s Advice: Beef chuck is a delicious choice of meat but its fat content is higher than that of its protein, having much of it in your diet poses threat to body weight and health, hence thin slices of lean cut are advised as an alternative. Add one or two eggs into the dish to boost protein intake. And why not pair it with a pot of cabbages for a well-balanced meal!
