Fortune Roast Chicken with Premium Oyster Sauce

1   Medium Whole Chicken (Around 1.5kg)


1 Pour the marinade (Premium Oyster Sauce, with option to add in XO Sauce for extra flavour boost!) over a thawed whole chicken. Rub the marinade to coat all over the outside, marinate for at least 3 hours.
2 Preheat oven for 180°C (fan), cover the chicken with foil and roast for 45-50 mins.
3 Remove foil and increase temperature to 220°C/200c fan. Bake for another 20 minutes or until golden brown and crispy.
4 Let the chicken rest for 10 mins. Ready to serve.


1 For additional savoury flavour, add 2 Tbsp of Lee Kum Kee XO Sauce inside the chicken for marinade.
2 For the ultimate flavour, use your hand to loosen the chicken skin away from the breast, then push XO sauce into the gap. Rub drizzle a tablespoon of vegetable oil all over the outside of the chicken, then rub the cavity with the marinade and stuff with a cut lemon (halved) or orange (halved).
