Roasted Ham with Christmas Accompaniments

Fancy a change to the usual festive traditional centrepiece? Then why not try this succulent, roasted ham recipe, it has a show-stopping marinade made using Lee Kum Kee Premium Light Soy Sauce and Lee Kum Kee Chilli Garlic Sauce. A festive favourite of ours, the ham will provide a feast for everyone this Christmas and leave leftovers to enjoy days later as you carry on the celebrations.

Ingredients

1kg boneless ham joint
1L lager beer
3 Tbsp vegetable oil for frying
400g white cabbage, lightly chopped
50g dry porcini mushrooms soaked in 500ml water overnight
1kg carrots - peeled

Marinade

For the Ham
4 whole cloves, crushed
6 black peppercorns, roughly crushed
1 Tbsp ground ginger
2 bay leaves

Seasoning

For the Cabbage
½ tsp ground allspice
2 bay leaves
1 tsp salt
1 tsp pepper

Sauce Mix

Glaze for the Meat
2 Tbsp spicy mustard
Glaze for the Carrots
2 Tbsp dry poppy seeds
2 Tbsp olive oil
3 Tbsp honey
Juice from a whole orange

Method

1 For the Meat
Place the ham into a container with marinade ingredients. Leave in the fridge for 1 hour.
2 Preheat the oven to 170°C/150°C fan/gas 3.
3 Heat a deep large casserole dish with oil and pan-fry the ham until golden, then add beer. Cover the pan and place in the oven to braise for about 90 minutes.
4 After the first 60 minutes raise the temperature to 190°C/170°C fan/gas 5. Uncover the meat, drain off the liquid and brush with the prepared glaze. Keep brushing and turn the meat around until nicely golden.
5 For the Cabbage
Place the cabbage, bay leaves and ground allspice in a large pan, and cover with soaked mushrooms with its soaking water– bring to a boil then simmer for 1 hour or until soft. Strain and season with salt, pepper and sesame oil.
6 For the Carrots
Cut the carrots into small chunks. Place into an oven tray lined with parchment paper.
7 Combine ingredients for the carrot glaze, pour over the carrots and place into the oven alongside the ham during its last 30 minutes of cooking.

Tips

1 Char Siu Sauce will give the perfect sticky glaze for the meat.
