Minced Pork in Lettuce Wrap (San Choy Bao)

San Choy Bao, thought to have originated in Hong Kong, usually consists or minced meat, such as pork or beef, cooked in a sauce with vegetables and served in a lettuce wrap.

This delicious, healthy dish is quick to make with little preparation required, making it the perfect mid-week meal!

Ingredients

200g minced pork (or Quorn mince as a vegetarian option)
20g each of finely chopped spring onions, onion, baby sweet corn, celery shiitake mushrooms (rehydrated), carrots
1 iceberg lettuce
2 Tbsp vegetable oil
1 chilli, finely chopped (optional)

Sauce Mix

Method

1 Prepare lettuce by separating the leaves and cut into round shape, clean and set aside.
2 Heat a wok then add the vegetable oil and stir fry the spring onion, onion and minced pork over a medium heat for 5 minutes Then add in remaining vegetables with sauce mix, and cook for another 10 minutes or until the sauce thickens and ingredients are cooked through.
3 Serve the prepared lettuce with a drizzle of the dressing and fill with a big spoonful of the stir-fried minced meat and vegetables. Alternatively, serve the lettuce, stir-fried meat, vegetables and the dressing sauce separately; let your guests make their own San Choy Bao.
