Vegetable skewers

1 Courgette, thinly sliced into rings
1 yellow summer courgette thinly sliced into rings
1 red onion cut into wedges
half a pineapple cut into 3cm pieces
3 peppers, red, yellow and green
6 green onion sliced into 5cm batons


2 Cloves garlic, crushed
1 Tbsp Grated ginger
2 tsp  black and white sesame seeds
1 Tbsp Castor sugar
juice of half a lemon
Sliced red chili to serve.


1 In a small bowl, mix all ingredients for the glaze together.
2 Thread the vegetables onto 8 small metal skewers or if using wooden, be sure to soak them for 30 minutes before using.
3 Preheat a BBQ or grill pan. Brush the glaze over the skewers and grill on both sides. When there are black grill marks on the vegetables, remove and set aside. Alternatively, you can also place under the oven grill until crisp at the edges,which takes about 5 minutes.
4 Sprinkle with sliced red chilli and serve.
