Chicken and Quinoa Fried Rice

This high protein, high fibre dish is an ideal post workout meal. The protein helps to support muscle repair and the carbohydrates are important for replenishing those glycogen stores. This recipe is really quick to make but super healthy and really delicious! Quinoa is a complete plant protein meaning it contains all nine essential amino acids. Ingredients

100g Quinoa
1 Large chicken breast
1 Tsp Olive oil
1 Onion
½ an orange pepper
½ a red pepper
1 Large carrot
2 Eggs
100g Edamame beans (out of the skin)

Method

1 Begin by cooking the quinoa as per the instructions on the packet.
2 Finely dice all the vegetables and chop the chicken breast into cubes.
3 Next, heat the olive oil in a pan. Add the chicken breast to the pan and cook for around 7 minutes or until the chicken is cooked through. Transfer the chicken to a bowl and set aside.
4 Then add the vegetables to the pan with one teaspoon of premium mushroom seasoning powder and cook for around 5 minutes until soft. Add the quinoa and stir well.
5 In a bowl whisk the eggs with the reduced salt soy sauce and then make a well in the pan and gently scramble the eggs into the pan drawing in the rest of the ingredients.
6 Finally, add the chicken and the edamame beans, pure sesame oil, one teaspoon mushroom powder and cook for a further 2 minutes.
7 Serve and enjoy!
