This recipe is our take on Hiyayakko which is a Japanese dish made with chilled tofu and a selection of toppings. Our recipe gives you an idea of how to cook tofu in a very tasty way, and yes before you ask, you can indeed it raw. You'll love how smooth and silky it tastes, also feel free to swap for your favourite toppings.

Ingredients

50g pancetta
300g (1 pack) silky tofu

Dressing

3 Tbsp [33]

Garnish

3 spring onions, trimmed and finely chopped
finely chopped red chilli (optional)

Method

1 Pan-fry the pancetta until golden, then blot them on a clean kitchen towel to remove the excess oil.
2 Carefully turn the tofu onto a plate and pat dry, then cut into 6 slices. Layer with the pancetta.
3 Drizzle over the dressing and garnish with spring onions and red chilli (if using).
