Honey and Ginger Soy Grilled Salmon

Ingredients

For salmon
4 pcs 200g salmon fillets, skin on
3 Tbsp water
2 tsp honey
1 Tbsp oil
For herb salad
20g coriander, picked
20g mint, picked
10g chilli, halved lengthways & finely sliced
3 stalks Spring onions, chopped
2 tbsp crushed peanuts, toasted (for garnish)
a pinch of salt and pepper

Sauce Mix

2 tsp minced garlic
1 Tbsp minced ginger

Method

1 Combine sauce mix in a bowl well.
2 Add salmon to bowl, coat all sides and allow to marinate for 30 mins in the fridge.
3 Heat oil in a non-stick pan at medium-high heat. Add fish, skin side down and fry for 2 mins or until caramelised, then add honey and water. Cover the lid and steam for a further 8 mins or until just cooked.
4 Mix herb salad in a bowl, set aside.
5 Serve salmon with the herb salad, then garnish with crushed peanuts and serve.
