Tomato Garlic Prawn Nachos

This is a luxury version of nachos. The prawns go well with the creamy guacamole, building to a complex layer of food textures. Compared to the traditional salsa, this appetizing tomato garlic sauce gives more flavour to the dish. We are sure that you will eat this over and over again.

Ingredients

2 Tbsp cooking oil
200g king prawns, peeled and cooked
2 tomatoes, peeled, seeded and diced
1 pack (150g) Tortilla chips
80g grated mozzarella cheese
2 Tbsp sour cream
15g jalapeno slices
Guacamole Ingredients:
1 large avocado, peeled, pitted and smashed
60g red onion, finely diced
1 lime, juiced
Large pinch salt
10g coriander, chopped
1 tomato, peeled, seeded and diced

Method

1 Mix all guacamole ingredients. Cover with cling film if not using immediately.
2 In a hot pan, add oil and sear the prawns. Add tomatoes and Lee Kum Kee Tomato Garlic Stir-fry Sauce and stir-fry with the prawns until heated through.
3 Spread the tortilla chips in an oven dish then sprinkle the cheese on top.
4 Place under a preheated medium hot grill until melted. Be careful not to burn the chips.
5 Serve the chips topped with prawns, guacamole, sour cream and jalepenos

Tips

1 Stacking up the nachos, or placing sauce and prawn on each chip individually, gives an appetizing feeling to the eaters!
