Warm Vegetarian Mushroom Salad

Ingredients

90g young spinach leaves
90g bean sprouts
90g fresh Shiitake mushrooms, sliced
50g carrot, sliced, or shredded

Method

1 Blanch all ingredients in boiling water for 2 minutes until tender. Drain and set aside.
2 Mix all dressing ingredients and vegetables together then serve.
