Turkey and Cauliflower Burgers

These burgers are the perfect healthy alternative to a British classic! They’re high in protein and contain a variety of plant ingredients to help nourish the gut too. The addition of the cauliflower can help to bulk out your turkey meaning you can get more from this recipe for a lower cost too.  - by Jenna Hope (RNutr)

Ingredients

1 Onion
3 Mushrooms
200g Cauliflower
500g Turkey mince
Pinch of black pepper
For serving:
A handful of spinach
Wholegrain burger buns
1 Large fresh tomato
(sliced) Gherkins

Method

1 Preheat the oven to 180°C.
2 Add the onion, mushrooms and cauliflower to a food processor and blitz into a rice like texture.
3 Next add the turkey mince, premium mushroom seasoning powder, the chiu chow chilli oil and the black pepper and pulse until well combined.
4 Remove from the food processor and shape into patties. Place them on a lined baking tray and pop them in the fridge for 10 minutes to firm up.
5 Put the burgers in the oven for 25-30 minutes until cooked through.
6 Toast the burger buns and then load them up with the burgers, spinach, gherkins and tomatoes. Enjoy!

Tips

1 You can make these patties ahead of time to speed up the process on those busier days!
