Mini Roti with Oriental Jackfruit

Ingredients

1 tin jackfruit
200g Shiitake mushrooms, stems removed
1½ tbsp sunflower oil
1 red onion, thinly sliced
2 cloves  garlic, thinly sliced
1 pack mini rotis
2 spring onions, sliced
1 handful of peanuts, chopped
1 lemon, in wedges
4 sprigs of coriander

Method

1 Drain the jackfruit, pat it dry and cut it into small cubes. Brush the shiitake clean, remove the stems and slice them into pieces.
2 Stir-fry the onion in the oil in a wok on high heat and add the jackfruit, mushrooms and garlicfor 3-4 minutes, until the mushrooms are tender, then stir in the sauce.
3 Bake the rotis according to the instructions on the packaging and place them on a wooden serving platter or plank. Spoon the stir-fry mixture onto the rotis.
4 Garnish with spring onions, peanuts and coriander and accompany with lemon wedges. Place the platter on the table and enjoy!
