Chicken Tacos with Char Siu Sauce

4 Tbsp mayonnaise
lime, grated zest and juice
1 Tbsp vegetable oil
red onion, thinly sliced
400g  boneless chicken fillet, thinly sliced
garlic clove, crushed
½  cucumber, cut into thin strips
125g  bean sprouts, washed and drained
Small handful of parsley, shredded
4 Tbsp unsalted roasted peanuts, minced


1 Preheat the oven to 130C/ 120C fan/ gas ½
2 Mix the mayonnaise with the lime zest and juice. Put the mayonnaise in a piping bag., if wished.
3 Bake the tacos crispy as instructed on the box.
4 Heat the oil in a wok and fry the onions for 3-4 minutes until softened, remove form the wok.
5 Add the chicken, stir fry over medium high heat for approxinately 6 minutes or until golden and cooked through, add the garlic cook for a further minute.
6 Add the Char Siu sauce, mix everything together then remove the wok from the heat. Fill the tacos with the cucumber, the bean sprouts and the chicken.
7 Pipe or drizzle the mayonnaise on the tacos and garnish with shredded parsley and peanuts.
