Stuffed Mushroom with Tofu

These shiitake stuffed mushrooms are easy to prep and only require a short amount of cooking time. Not only simple to prepare and low in calories, but tons of flavour also makes them a real crowd-pleaser at dinner parties.

Ingredients

200g hard Tofu (Mashed)
100g sweet Corn Kernel
8 pcs shiitake Mushrooms (to Pedicle)
3 Tbsp oat Flakes
2 bundles parsley (Minced)
* prepare 1½ Tbsp. corn flour for dusting mushroom
1 pcs green Onion (Finely Chopped)
1 Tsp minced Ginger 1 Tsp.
¼ pcs red Capsicum (Diced)

Seasoning

1 tsp mushroom Powder
1 tsp corn Flour

Method

1 Mix red capsicum, oat flakes, corn, chopped green onion, minced ginger and all seasonings, then add in hard tofu and mix well.
2 Lightly dust cornflour onto the inner side of the mushroom.
3 Stuff the tofu into the mushroom cap.
4 Steam the stuffed mushrooms for 8 minutes.
5 Sprinkle with minced parsley and serve.
