Special Fried Rice can be found on menus in Chinese takeawyas and restaurants all around the world. Our vegetarian version is versatile, in that you can swap out the vegetables for any that you prefer, such as carrot or mushroom.
1 cupuncooked rice (roughly 150g), cooked and cooled
2 Tbspvegetable or groundnut oil
150gbroad beans (podded) or green beans – or a mix of both, (you can use frozen)
2spring onions, finely chopped
2 tbspvegetable or groundnut oil
1red chilli, finely sliced for garnishing (optional)
