XO Turnip Cake

Ingredients

2kg Mooli, peeled and grated
300g Rice Flour
8 pcs Chinese mushroom, soaked, squeezed and diced
2 Tbsp Dried shrimps, soaked and drained
4 pcs Chinese sausage, diced
25g diced Chinese Preserved Meat (optional)
1 Tbsp Ginger Juice
1 Tbsp Cooking wine
150ml Water

Sauce Mix

1 Tbsp Oil
2 Tbsp Sugar
2 tsp Salt
½ tsp White Pepper Powder

Garnish

1 Tbsp Lee Kum Kee XO Sauce (optional)

Method

1 Stir-fry Chinese mushrooms, dried shrimps, Chinese sausages and preserved meat in a hot wok with 1 Tbsp oil until fragrant. Add ginger juice and wine to cook for another minute then take out and set aside.
2 Add mooli into the same wok to cook for 20 minutes in medium heat, until soften then add in the sauce mix and mix well. If turnip is very dry, add some water to help with the cooking. The texture should be a wet mixture.
3 Turn off the heat then mix in the rice flour and all the cooked ingredients, mix well.
4 Put mixture into an oiled cake tin [20 cm] and steam over high heat for 1 hour. Then take out and sprinkle with Lee Kum Kee XO Sauce for garnish. And let it cool completely and refrigerate before pan-fried.

Tips

1 How to serve : Cut 2 cm slices and pan-fry with some oil until golden or steam until heated through.
