Veggie Noodles

This recipe is quick and easy and is packed with vegetables which provide a great source of polyphenols and Vitamin C to help support your immune function. Additionally, the recipe contains a range of plant fibres to help nourish a healthy gut. The walnuts are also rich in omega-3 to help with joint health and brain function too.  - by Jenna Hope (RNutr)

Ingredients

1 Tbsp coconut oil
2 Cloves Garlic
1 Small cube of fresh ginger
1 Large white onion
1 Red pepper
1 Yellow pepper
150g Broccoli
150g Mushrooms
1 Large carrots
1 Packet Noodles
40g Walnuts
1 Tbsp Pumpkin seeds

Method

1 Begin by finely slicing the onion, peppers, broccoli and mushrooms. Next, shred the carrots into ribbons.
2 Heat the coconut oil in the pan. Once heated, mince the garlic and finely chop the ginger and add to the pan.
3 Next, add the onions to the pan and sauté for 3-4 minutes until the onions become translucent. 4. Once the onions are soft add in the peppers, broccoli, mushrooms and carrots. Add mushroom seasoning powder and sauté over a medium heat for 5-6 minutes.

Serve the noodles into a bowl and top with the walnuts and pumpkin seeds. Enjoy!
