Sesame Chicken Sandwich with Soy-honey Glaze

This high protein sandwich is perfect for enjoying at work or as a weekend lunch. It’s a great source of healthy fats and opting for wholegrain bread can help to increase your fibre consumption too. Ingredients

1 Large chicken breast
1 Tsp honey
½ Tsp lime juice
1 Tsp sesame seeds
½ Avocado
Handful of spinach
2 Slices wholegrain bread
Lee Kum Kee Chiu Chow Chilli Oil to taste (optional)

Method

1 Begin by pre-heating the oven to 180°C (fan) and lightly scoring the chicken breast.
2 Next, add the sesame oil, soy sauce, honey and lime juice to a bowl and mix well. Spread the marinade over the chicken and place in the fridge for 30 minutes.
3 Then place the chicken in a baking tray and bake in the oven for 25-30 minutes (check the chicken is cooked all the way through).
4 Place the bread in the toaster and toast to your desired consistency.
5 Slice up the avocado and load up the sandwich with the spinach on the base, followed by the chicken breast and more spinach.
6 Add Chiu Chow Chilli Oil if you’re spicy seeker. Serve and enjoy!
