This Chilli Garlic Glazed Salmon recipe is perfect for the summer months and can be cooked on either the barbecue or grill. It's easy to prepare and healthy, so it makes for a great light lunch, but with a bit of a kick!
Place the salmon in a deep dish, pour over the marinade and leave for 1 hour.
Prepare your barbecue or grill. If you use a charcoal grill, make sure it is fully lit and all the flames have died down. You want your barbecue to be as hot as possible.
Grill for 5 to 7 minutes, until the skin is crispy and fish is almost cooked. Flip the fish over, and grill for another 2 minutes and then flip back over. Brush the fish liberally with the glaze and leave to cook for 2 minutes, making sure the fish is not burnt.
Remove the salmon from the grill, brush over the remaining glaze if desired, and serve immediately with a selection of grilled vegetables.
Tips
Serve with asparagus, baby courgettes, tenderstem broccoli, which can all be cooked on the barbecue or grill with the fish.
