Salmon Poke Bowl

Poke bowls are a real trend right now. The idea is deconstructed sushi, so when served in a bowl you can pack much more fresh and healthy ingredients in. You can use most fresh ingredients or leftovers from the fridge, whatever you fancy to make it your own!

Ingredients

½ cup rice
200g Sashimi-Grade Salmon
1 tsp Sesame seeds or Black Sesame Seeds

Sauce Mix

1 Spring Onion, finely sliced
1 Tbsp Lee Kum Kee Premium Light Soy Sauce
1 Tbsp White Wine Vinegar
1 Tbsp Lee Kum Kee Premium Oyster Sauce
1 Tbsp Lee Kum Kee Sesame Oil
1 Tbsp Chilli Flakes

Toppings (optional)

½ Avocado sliced
Other salad ingredients, including thinly sliced cucumber or tomatoes

Method

1 Cook the rice as per the pack instructions.
2 Slice the salmon into 1 cm cubes.
3 Combine the Sauce Mix ingredients in a bowl and stir in the salmon cubes.
4 Spoon in the rice in a large bowl and add the Sauce Mix and Salmon on top of the rice. Sprinkle sesame seeds and add optional toppings.
