Ingredients

500g Beef shin
2 Tbsp Plain flour
2 tsp  Salt and pepper (each)
4 Tbsp  Olive oil
6 Medium yellow onions sliced into half moons
2 Bay leaves
2 tsp Mild curry powder
2 Tbsp  White wine vinegar
500ml Beef stock
1 Tbsp Castor sugar
Mashed potatoes, green vegetables and chopped parsley to serve

Method

1 Slice the meat into 5cm pieces. Season 1 tsp of each salt and pepper and then toss in the flour.
2 Heat 2 Tbsp of the oil in a large heavy pot with a fitted lid. Sear and brown the meat in batches until golden and then remove.
3 Add the remaining oil, bay leaves and the onions. Cook on low heat with 1 tsp of each salt and pepper. Simmer this for 20 minutes and then add the meat, curry powder, vinegar, stock, Lee Kum Kee Premium Oyster Sauce and sugar. Place the lid on and cook on low heat for 1 hour. It’s done when the meat is fork tender.
4 Serve with green vegetables, mashed potatoes and parsley.
