XO Sauce in Lettuce Wrap

150g   Canned & Sliced Water Chestnuts, diced
80g   Asparagus Tips, diced
100g   Firm Tofu, diced
80g Carrot, diced
80g   Shiitake Mushrooms, diced
1 small tin   Sweet Corn, drained
2 Tbsp   Vegetable Oil
2 Little Gem Lettuce, separate leaves

Sauce Mix

2 Tbsp   Water


1 Heat a wok over high heat with oil until it is very hot. Add all the diced ingredients and stir-fry for 3 minutes.
2 Add in the sauce mix and cook for 3 minutes or until the sauce reduced, then remove from heat and set aside.
3 Place 8-10 lettuce leaves on plate, spoon the cooked ingredients on top. Then garnish with extra XO sauce. Ready to serve.
