Ramen Breakfast

Who says you can't have noodles for breakfast? Ramen Breakfast gets its name from the addition of ramen noodles that you add to this dish. You can enjoy this meal at any time of day, but we find it a great way to set you up for the day, serving as breakfast or brunch.

Ingredients

50g udon or ramen noodles
1 egg, soft boiled, peeled
2 rashers streaky bacon
150ml well flavoured hot chicken stock
Small handful sprouted seeds eg alfalfa
2 tbsp [33]
Thinly sliced spring onions

Method

1 Cook the noodles as directed on package then drain. Grill or fry bacon cut into pieces.
2 Pour hot stock into warm bowl, add noodles.
3 Top with the halved egg and bacon, drizzle over [33]. Add sprouted seeds and sliced spring onions.

Tips

1 Leek can be used instead of spouted seeds. Use ready cooked whole wheat noodles for convenience. If you like spice, sprinkle over chilli flakes.
