Oriental Chinese Fajitas

2 chicken breasts, sliced
Wholemeal tortillas or tacos
1 red and yellow pepper
1 red onion, sliced
15g ginger, grated
2 cloves of garlic, chopped
2 Tbsp vegetable oil
Lettuce or mixed salad

Sauce Mix

1 tsp ground cumin
1 Tbsp smoked paprika
1 Tbsp honey


Roasted peanuts, crushed (optional)


1 Marinate chicken with sauce mix and stir. Set aside for at least 30 minutes before cooking.
2 Add a splash of oil into the pan over a medium-high heat then add in ginger, peppers and onions and stir-fry for 3 minutes until the onions are softened.
3 Reduce the heat down to medium and add the garlic, followed by the marinated chicken and stir fry for 10 – 12 minutes until cooked.
4 Put the tortillas/ tacos in the oven to heat up.
5 Place the cooked chicken on a tortilla with a mixed salad. Garnish with crushed peanuts, leftover sauce and enjoy.
