Sabayon Cocktail with Cinnamon and Sesame

Not quite the cocktail you may be used to, this delightful cocktail is more of a dessert. Creamy, yet dairy-free. You can choose the consistency depending on your preference by adding in more or less Marsala wine. This recipe is also suitable for vegetarians.

Ingredients

4 egg yolks
4 Tbsp caster sugar
4 tsp Marsala

Seasoning

Garnish

1 Tbsp ground cinnamon

Method

1 In a medium bowl placed over a pan of simmering water, beat the egg yolks and sugar with a whisk (or electric hand beaters) until smooth and pale yellow, and the sugar has dissolved.
2 Slowly add Marsala in parts and continue beating until you reach the desired thickness.
3 Add the Sesame Oil, check the taste and pour into dessert glasses.
4 Serve immediately and finish with a dusting of cinnamon.

Tips

1 Use alcohol of choice to flavour the cocktail. 
2 Nutmeg can be a replacement for cinnamon. 
3 Garnish with black sesame seeds if desired. 
4 Avoid overheating the egg mix to prevent crumbling. 
5 Use leftover egg whites as a garnish, whisked with icing sugar and a pinch of salt. Or freeze them to use later, perhaps in a pavlova. 
6 Suitable for vegetarians.
