Baked Five Spice Chicken, Coconut Waffles with Sweet Soy Maple Syrup by Ching He Huang

An alternative to pancakes on Pancake Day! I love American style thick ‘waffles’, think comforting and delicious. This is the perfect served with crispy crunchy pieces baked chicken in a Five Spice seasoning on top and drizzled with Lee Kum Kee’s Sweet Soy Sauce fused with Maple syrup to add an umami sweet sticky ‘pop’ making it the perfect drizzling sauce. Enjoy!

Ingredients

For the Baked Chicken
Chicken Thighs Fillet, sliced into halves
100g  Plain Flour
Pinch Sea Salt
1 tsp Chinese Five Spice Powder
1 tsp Chilli flakes
Eggs Lightly beaten
300g Panko Breadcrumbs
Olive Oil  drizzle on the coated chicken
For the Waffles
300ml   Coconut milk
1   Egg
2 Tbsp   Butter, melted
375g  Plain Flour
¼ tsp  Sea Salt
½ tsp   Baking Powder
For the Sweet Soy Maple Syrup
5 Tbsp   Maple Syrup

Method

1 Preheat the oven to 180 degrees. In a bowl add the Chinese five spice powder and chilli powder to the flour. Beat 2 eggs. Pour some Panko breadcrumbs into a bowl. Pane and dip the chicken thighs first into the seasoned flour, then into the beaten egg mixture, followed by dipping it into the Panko breadcrumbs. Set on a baking tray. Spray 8-9 sprays of Olive oil spray making sure the chicken pieces are well coated. Bake in the oven at 180 degrees for 30 minutes. Remove from oven when ready.
2 Combine the dry ingredients into a bowl. Mix together the egg, melted butter and coconut milk into another bowl. Gently whisk the wet ingredients into the dry ingredients and beat until the batter is smooth.
3 Heat the waffle iron and bring 125ml of the batter and pour it onto each iron. Grill the waffles according to your waffle iron instructions. Remove the toasted waffles from the iron, place on a baking wire rack and keep it in the warming draw until the chicken is cooked. Repeat and make a total of 4 waffles.
4 In a small bowl, whisk together Lee Kum Kee Sweet Soy Sauce with Maple Syrup. Set aside.
5 To assemble, place the warm waffle onto a plate, stack it with chicken pieces and drizzle with Sweet Soy Maple Syrup and eat immediately.
