It doesn't get quicker and easier to have a delicious, authentic tasting Chinese meal than our Microwaved Udon Noodle Soup recipe. This recipe is perfect for those midweek meal options when you get home late from work, and are looking for something that tastes good, with minimal effort!

Ingredients

200g udon noodles
2 shiitake mushrooms, reconstituted in hot water then sliced
1 bok choi, quartered lengthways

Dressing

Garnish

1 spring onion, finely diced

Method

1 In a serving bowl, place the udon noodles, shiitake mushrooms and bok choi in the water, then microwave for 3 minutes, set aside.
2 Crack an egg in the cold water and microwave for 1 minute, set aside.
3 Add the sauce mix to the noodle bowl, then the microwaved egg on top. Drizzle with Lee Kum Kee Chiu Chow Chilli Oil for an extra kick.
4 To serve, garnish with the spring onion.
