Pulled Aubergine Salad

Ingredients

1 large aubergine
1 Tbsp oil
½ red chilli, deseeded and diced into small peices
A handful of coriander leaves

Dressing

1 tsp  finely chopped spring onion
1 tsp garlic, crushed
1 tsp Lee Kum Kee Seasoned Rice Vinegar
1 Tbsp sugar

Method

1 Steam the aubergine for 20 minutes, or until tender, and pull it into strips and put into a serving dish.
2 Mix the dressing ingredients in a bowl, set aside.
3 Heat up the oil in the pan until it is smoking hot. Add it to the dressing ingredients, stir well and pour it over the aubergine.
4 Toss together and garnish with chilli and coriander leaves before serving.
