Char Siu Tacos

Ingredients

4 Tbsp mayonnaise
lime, grated zest and juice
tacos
1 Tbsp vegetable oil
red onion, thinly sliced
400g  pork belly, thinly sliced
garlic clove, crushed
½  cucumber, cut into thin strips
125g  bean sprouts, washed and drained
Small handful of parsley, shredded
4 Tbsp unsalted roasted peanuts, minced

Method

1 Preheat the oven to 130C/ 120C fan/ gas ½
2 Mix the mayonnaise with the lime zest and juice. Put the mayonnaise in a piping bag., if wished.
3 Bake the tacos crispy as instructed on the box.
4 Heat the oil in a wok and fry the onions for 3-4 minutes until softened, remove form the wok. Add the pork belly, stir fry over medium high heat for approxinately 10 minutes or until golden and cooked through. and the garlic cook for a further minute.
5 Add the Char Siu sauce, mix everything together then remove the wok from the heat. Fill the tacos with the cucumber, the bean sprouts and the pork.
6 Pipe or drizzle the mayonnaise on the tacos and garnish with shredded parsley and peanuts.
PREPARATION AND COOKING TIME: 25 MINUTES
