Pineapple Skewer

1 ripe pineapple
50g icing sugar
400g vanilla ice cream
12 bamboo skewers


1 Soak the bamboo skewers in water before use to stop them from burning. Cut the the pineapple flesh into 12 wide strips from top to bottom and dust with icing sugar. ​
2 Arrange 1 pineapple chunk on each of 12 skewers , then place on a pre heated barbeque, or under a medium-hot grill.
3 ​Grill for about 2 minutes or just until fruit begins to turn golden brown. Brush the Lee Kum Kee Plum Sauce over the pineapple.
4 ​Serve with vanilla ice cream with extra Lee Kum Kee Plum Sauce swirled on top.
