Warm Mushroom And Cherry Tomato Salad

2 Tbsp olive oil
250g  white mushrooms, thickly sliced
clove of garlic, finely chop
125g  cherry tomatoes, halved
2-3 handfuls of baby spinach leaves


2-3 Tbsp [31]


1 Heat oil in a saucepan. Add the mushrooms, stir-fry for 4 minutes.
2 Add the garlic and cook for 1 minute, keep stirring. Remove from heat. Add the dressing and toss well.
3 Divide spinach and tomatoes between serving plates. Plate with the garlic mushrooms. Serve warm.


1 Replace spinach leaves with other salad leaves, such as pak choi.
2 Scatter over nuts and seeds such as toasted pumpkin seeds if desired.
