Summer Roll with Hoisin Dipping Sauce

Ingredients

½ Avocado, thinly sliced
½ Soft Lettuce, shredded
1 Medium Carrot, grated
¼  Cucumber, cut into matchsticks
50g  Beansprouts
2 Tbsp Salted Roasted Peanuts, roughly chopped
4 Rice Wrappers
A handful mint leaves
Small handful coriander leaves

Sauce Mix

1 Tbsp Water

Method

1 Half-fill a deep dish with cold water. Dunk a rice wrapper into the water and keep patting it for approximately 1½ minutes until it becomes pliable, but not overly soft.
2 Arrange the ingredients towards one end of the wrapper. Roll it up, squeezing out the air, and fold in the sides to make a parcel.
3 Serve the summer rolls with Lee Kum Kee Hoisin Sauce for dipping.
