Steak Marinated with Premium Oyster Sauce

Ingredients

200 - 220g (each) 4 x sirloin or rump steak
4 Tbsp butter

SAUCE

2 Tbsp butter
2 shallot peeled & diced small
120g beef stock or red wine
2 Tbsp crème fraiche

Method

1 Marinade steaks with Premium Oyster Sauce and set aside for a couple of hours. Remove from fridge an hour before cooking.
2 Heat a large non-stick frying pan to medium high heat.
3 Add steaks onto pan and listen to the sizzle. Let steak brown on one side before turning. (45 seconds on each side for rare, 1.3 minutes medium rare, 1.5 minutes for medium), set a side to rest.
4 Once the steak is turned over to cook on other side, add butter in the pan. Tilt pan and baste steak with butter as it cooks.
5 Take care not to burn the butter. Once the steak is cooked to your desired temperature, remove from heat and leave to rest in a warm place.
6 To make the sauce, melt butter in the same pan. Then add shallots and cook over a medium heat for 2 to 3 minutes until translucent. Add Black Pepper Sauce and mix well with shallots for 30 seconds.
7 Stir in the stock or red wine. Simmer 1 - 2 minutes. Turn off heat and stir-in crème fraiche.
8 To serve, place steak on pre-warmed plates. Pour sauce over steaks. Serve with chips or salad.
