Spicy Aubergine with Dried Shrimp Chilli Oil

Ingredients

2 aubergines, cut into finger-length batons
200g pork mince
1 tbsp minced garlic
1½ tbsp Lee Kum Kee Fiery Hot Dried Shrimp Chilli Oil (for steps 2 and 3)
1 tbsp sugar
1 tsp cornflour
3 tbsp cooking oil
200ml water (approximately 13 tbsp)

Method

1 Marinate the pork mince with the light soy sauce, sugar and cornflour. Set aside.
2 Heat the cooking oil in a wok over a medium heat. Add the minced garlic and marinated pork, and stir-fry for 3 minutes. Add the aubergine and stir-fry over a high heat. Stir in the oyster sauce and ½ tbsp of the dried shrimp chilli oil, then add the water. Cover and simmer over a low heat for 15 minutes.
3 Once the aubergine is soft, add the remaining 1 tbsp dried shrimp chilli oil and mix well. Turn off the heat and serve hot.
