Soy Sauce Egg Tart

Ingredients

Dough
160g Butter
25g Icing sugar
20g Evaporated milk
280g Plain flour
15g Milk powder
Soy Sauce Custard Filling
4 Eggs
20g Evaporated milk
340g Water
40g Sugar

Method

1 DOUGH
2 Place the butter, icing sugar, evaporated milk, plain flour and milk powder into a mixing bowl. Mix until a smooth dough forms.
3 Divide the dough into portions of approximately 16g each.
4 Press each portion evenly into tart moulds, covering the base and sides to form the tart shells.
5 SOY SAUCE CUSTARD FILLING
6 Dissolve the sugar in the water and stir until completely dissolved.
7 Add the eggs and evaporated milk, mix well.
8 Add the Lee Kum Kee Premium Light Soy Sauce and stir well.
9 Pour in the sugar water and mix until fully combined.
10 ASSEMBLY & BAKING
11 Fill each tart shell with the custard mixture until about 80–90% full.
12 Place the tarts in a combi steam oven and bake at 180°C for 10 minutes.
13 Allow the tarts to cool for a few minutes before serving.

Tips

1 Strain the custard through a fine meshed strainer, then let it rest for a few minutes, in order to get rid of air bubbles and achieve a smooth and glassy finish.
