Sausage & Mash with Oyster Sauce Gravy

Ingredients

8 Sausages (high meat content) Cumberland or pork & herb
800g potatoes, peeled and chopped
50g butter
50ml milk or cream
Salt & pepper, to taste

GRAVY

1 Tbsp   butter or vegetable oil
1   onion, finely sliced
1   garlic clove, minced
1 Tbsp   plain flour
300g   beef or chicken stock
Black pepper, to taste

Method

1 Preheat the oven to 190°C (375°F).
2 Place sausages on a heat –proof tray and roast for 20–25 minutes, turning halfway through, until golden and cooked through.
3 Boil potatoes in salted water for 15–20 minutes until soft.
4 Drain, then mash with butter and milk/cream until smooth. Season to taste with salt and pepper.
5 In a pan, melt butter over medium heat. Add sliced onion and cook slowly for 8–10 minutes until caramelised.
6 Add garlic and cook for another minute.
7 Sprinkle flour, removing lumps and cook for 1 minute to make a roux.
8 Gradually whisk in the stock to avoid lumps.
9 Stir in oyster sauce, Simmer for 5–7 minutes, stirring occasionally, until thick and glossy. Season with black pepper.
10 Plate up the mash, top with sausages, and pour over the rich oyster sauce gravy. Garnish with chopped parsley if desired.
