Satay Chicken & Beef Skewers

Ingredients

400g Chicken Thigh Fillets, diced into bite-sized pieces
400g  Beef Steak, dice into bite-size pieces
250g  Mixed Peppers, diced into pieces similar in size to the chicken
3 Red Onions, cut into wedges
20 Skewers, soaked in cold water for 30 minutes to prevent burning

Marinade

2 Tbsp Lemon Juice
2 Tbsp Vegetable Oil

Dressing

2 Tbsp Water

Method

1 Marinate the chicken and beef separately for 60 minutes.

Thread the chicken onto skewers, alternating with pieces of mixed peppers. Thread the beef separately, alternating with pieces of red onions.

For oven cooking, arrange the skewers on a baking tray. Cook the chicken at 180°C (or Fan 160°C) for 15 minutes, and the beef for 10 minutes. Then, turn the skewers and brush them with more marinade sauce. Continue cooking for an additional 5 minutes.
