Satay Beef Noodles with XO Sauce

Ingredients

300g Sirloin Steak or Hanger Steak, sliced thin about 3 to 5 mm
2 packs Instant Noodles (beef or sesame flavour)
1 Tbsp Cooking Oil
1 Shallot, finely diced
1 tsp Ginger, grated
1 tsp Garlic, finely diced
2 Tbsp [49[

Marinade

½  tsp Shaoxing Wine
1 tsp Sugar
1 tsp Corn Flour + 1 Tbsp water
1 tsp Cooking Oil
½ Egg White
A pinch of White Pepper Powder

Sauce Mix

1 Tbsp Peanut Butter
1 tsp Sugar
150ml Water

Method

1 Slice the steak and marinate it for 30 minutes.
2 Heat a pan or wok over medium-high heat before adding the oil. Add the sliced steak and stir-fry it. Add ginger and shallot, sauté until fragrant. Then, add XO Sauce and set it aside.
3 Sauté the garlic paste until fragrant over low heat. Pour in the sauce mix and bring it to a boil.
4 Return the beef to the sauce and mix well. Cook until the sauce thickens and mix it well.
5 Bring the water to a boil and cook the instant noodles according to the packet instructions.
6 Top the noodles with the satay beef and sauce. Ready to serve.
