Prosperity Salad (Lo Hei)

Ingredients

100g wonton pastry, fried or anything that is crispy
1 red grapefruit
2 carrots
1 white radish
1 red pepper
1 yellow pepper
1 cucumber
1 bunch coriander
100g ginger, pickled
100g shallots, pickled
4 tbsp dry roasted peanuts, crushed
2 tbsp white sesame seeds, roasted
200g smoked salmon
Salt & pepper to taste

Dressing

½ tsp  5-spice powder
½ tsp white pepper, ground
lime, juiced

Method

1 CREATE THE SALAD DRESSING
2 Mix plum sauce or Sweet & Sour Stir-fry Sauce, 5-spice powder, white pepper, sesame oil, and lime juice in a microwave-safe bowl.
3 Microwave on high for 1 minute, then let it cool.
4 PREPARING THE INGREDIENTS
5 Peel and julienne the carrot, white radish, and cucumber.
6 Squeeze out excess water from the radish and pat dry with paper towels.
7 Slice the red and yellow pepper into strips.
8 Wash and roughly chop coriander leaves.
9 Toast crushed peanuts and sesame seeds in a pan until fragrant (about 2 mins each).
10 Slice salmon into thin pieces and refrigerate until ready to use.
11 ASSEMBLE THE DISH
12 For this salad, you need a large and shallow platter.
13 Start from the outer edge of the platter, work your way around the rim and then start moving towards the centre. Leave a place in the centre of the platter for the salmon.
14 Each in two separate piles, assemble the ingredients to include white radish, cucumber, carrot, coriander, red pepper, yellow pepper, red grapefruit, fried wonton pastry and pickled ginger.
15 Place the salmon in the centre.
16 Place a ⅓ of the dressing into a bowl for guests who may like more sauce, leaving the remaining ⅔ for the prosperity toss. Just as you're about to do the toss, pour the dressing all over the salad.
