Ingredients

For the marinated BBQ chicken
250 g Chicken thigh, trimmed
60 g Fine granulated sugar
1 tbsp Garlic, minced
2 tsp Red fermented bean curd, mashed
½ tsp fFne sea salt
½ tsp Chicken powder
½ tsp Shallot oil
2 tsp Maltose, warmed slightly to soften
½ tsp Chinese rose wine
For the BBQ sauce
35 g Sugar
80 ml Water
½ tsp Ginger, finely diced
½ tsp Onion, finely diced
1 tsp Green onion, finely chopped
2 tsp Potato starch
1 tbsp Corn starch
20 ml Cold water, for the slurry
a Plash of cooking oil, for frying
For the butter dough
75 g Unsalted butter, softened
75 g Plain pastry flour
For the water dough
65 g Plain flour, plus a little extra for dusting
15 g Bread flour
1 Tbsp Neutral vegetable oil
8 g Custard powder
50 ml Cold water
For the filling and finishing
200 g Cooked BBQ chicken, finely diced
160 g Prepared BBQ sauce, cooled
40 g Finely diced onion, stir-fried until sweet

Method

1 Marinate the chicken
Whisk the marinade ingredients, except the chicken, until the sugar and maltose dissolve. Coat the chicken evenly, cover and refrigerate overnight, or for at least 12 hours.
2 Cook the chicken
Preheat the oven to 220°C. Roast the chicken on a wire rack over a baking tray until caramelised and fully cooked. Cool, finely dice and reserve 200 g.
3 Make the BBQ sauce
Whisk the sugar, Lee Kum Kee Premium Light Soy Sauce, Lee Kum Kee Premium Dark Soy Sauce, Lee Kum Kee Premium Oyster Sauce and 80 ml water until the sugar dissolves.
4 Stir-fry the ginger, onion and green onion in a splash of hot oil until aromatic. Add the sauce and bring to a rolling boil.
5 Mix the potato starch and corn starch with 20 ml cold water until smooth. Reduce the heat and gradually whisk in the slurry until thick and glossy. Cool and reserve 160 g.
6 Prepare the pastry
Mix softened butter and pastry flour until smooth. Flatten into a square between baking paper sheets.
7 Knead the water dough ingredients until smooth and supple. Flatten, place the butter dough in the centre and fold over to enclose completely.
8 Roll into a rectangle, fold into thirds and turn 90 degrees. Repeat twice. Chill between folds if warm or soft, then cover and refrigerate for at least 3 hours.
9 Prepare the filling
Mix the cooked chicken, prepared sauce, stir-fried onion and Lee Kum Kee Chiu Chow Chilli Oil until evenly combined.
10 Shape the puffs
Roll the chilled pastry to 5 mm thick on a lightly floured surface. Cut 6 cm rounds. Place 15 g filling in each centre, fold, seal firmly and arrange on lined trays.
11 Bake and finish
Preheat the oven to 220°C. Bake until golden, flaky and cooked through. Cool slightly, then pipe a dot of Lee Kum Kee Chiu Chow Chilli Mayo onto each puff. Garnish with toasted black and white sesame seeds. Serve warm.
PREP TIME: OVERNIGHT MARINATING, PLUS AT LEAST 3 HOURS CHILLING
