Gnocchi Chicken & Mushroom Pie

Ingredients

1 Brown onion, finely chopped
2 Garlic cloves, crushed
250g Chestnut mushrooms, quartered
4 Fresh thyme sprigs, leaves picked
400g Boneless & skinless chicken thighs, chopped
2 tbsp Olive oil
1 tbsp Unsalted butter
1 tbsp Plain flour
300ml Boiling water
150ml Double cream
500g Gnocchi
50g Parmesan, grated
Mixed leaf salad leaves, to garnish
Salt & pepper, to taste

Method

1 Preheat the oven & prep the ingredients: Preheat your oven to 200°C/180°C fan/Gas mark 6.
2 Peel and finely chop the onion. Peel and crush the garlic. Chop the mushrooms into quarters. Pick the thyme leaves. Chop the chicken into bite-sized pieces.
3 Make the pie filling: Heat 1 tbsp olive oil (or your preferred cooking oil) in a large frying pan over a medium heat. Cook the chicken in the pan for 7 - 8 minutes, until golden-brown. Transfer from the pan and set aside.
4 Melt the butter in the same pan, add the onion and cook for 6 - 8 minutes over a medium heat, until it starts to soften. Stir in the garlic and 1 tsp Mushroom Seasoning Powder and cook for 1 minute, until fragrant.
5 Tip in the mushrooms and cook for another 5 minutes. Scatter the flour over the mushrooms, mix well and cook for 1 minute.
6 Pour in the boiling water and bring to a simmer, then add the double cream and simmer for 5 minutes, until thickened slightly.
7 Stir in the thyme leaves and cooked chicken. Check the seasoning and adjust to taste with salt and pepper (the Mushroom Seasoning Powder adds salt so you may not need to add extra).
8 Assemble & bake the pie: Transfer the filling to an approx. 23cm round pie dish.
9 In a bowl, toss the gnocchi with 1 tbsp olive oil, 1 tsp Mushroom Seasoning Powder and the Parmesan, until evenly coated.
10 Scatter the gnocchi over the filling in one even layer. Bake for 25–30 minutes until the gnocchi is golden and crisp and the filling is bubbling at the edges.
11 Plate Up: Plate up the pie with the mixed leaf salad - then tuck in and enjoy!

Tips

1 This is a deliciously versatile recipe. If you like, you can also make this pie in 4 small pie dishes.
2 It also works well for batch cooking - make a double portion and freeze the pie for up to one month in the freezer.
3 For the best results when cooking the mushrooms, don’t overcrowd the pan, allowing them to cook quickly.
4 Make sure you slice your chicken pieces into roughly the same size for the best, even cooking results.
5 If you prefer, you can also use leftover cooked chicken. For a vegetarian version, you can either use vegetarian pieces instead of the chicken or double up on the mushrooms.
