Forest Silk Rice

Ingredients

For the sticky rice base
200 g Long-grain sticky rice (glutinous rice)
50 g Water chestnut, finely diced
50 g Dried shiitake mushrooms, soaked, stems removed and finely diced
25 g Preserved radish, rinsed and finely minced
25 g Coriander, finely chopped
Approximately 3 tbsp Lee Kum Kee Chiu Chow Chilli Oil, stirred well before measuring
For the garnish and finishing
Crispy fried onions, to top
Crispy fried garlic, to top
Toasted black and white sesame seeds, to garnish
Fresh chives, finely snipped, to garnish

Method

1 Prepare the rice and mushrooms
2 Soak sticky rice in cold water for 8–12 hours, then drain thoroughly. Steam in a lined steamer for approximately 20 minutes, until tender and translucent.
3 Cook soaked shiitake mushrooms thoroughly following packet instructions, then drain.
4 Season the rice
5 Combine hot rice, water chestnut, cooked shiitake mushrooms, preserved radish and coriander.
7 Shape the rice squares
8 Press approximately 25 g portions firmly into small square moulds, then carefully unmould onto a serving plate.
9 Garnish and serve
10 Pipe a small rosette or dot of Lee Kum Kee Chiu Chow Chilli Mayo onto each square. Top with crispy fried onions and garlic, toasted sesame seeds and finely snipped chives. Serve warm or at room temperature.
OVERNIGHT SOAKING, PLUS APPROXIMATELY 20 MINUTES
