Kung Pao Fajita

Enjoy your favourite Chinese takeout with a Tex-Mex twist on a Friday night with friends and families.

Ingredients

2   chicken breasts
1   red pepper
1   yellow pepper
red onion, sliced
15g   ginger, grated
2 cloves of garlic, chopped
2 Tbsp   vegetable oil
A handful of   lettuce or mixed salad
Wholemeal tortillas or tacos

Sauce Mix

1 tsp  ground cumin
1 Tbsp   smoked paprika
2 tsp   salt
1 Tbsp   honey

Garnish

Roasted peanuts, crushed (optional)

Method

1 Marinate chicken with sauce mix and mix well. Set aside for at least 30 minutes before cooking.
2 Add oil into the pan over a medium-high heat then add in ginger and onions to stir-fry for 3 minutes until the onions are softened.
3 Add the marinated chicken and garlic to the pan to stir fry for 6 minutes and then add in the pepper to cook for further 5 minutes until the chicken is cooked then set aside.
4 Put the tortillas/ tacos in the oven to heat up
5 Place cooked chicken and mixed salad on a tortilla. Garnish with crushed peanuts
PREP TIME: 10 MINUTES COOK TIME: 15 MINUTES
