Spicy & Garlic Tofu Burger

This spicy garlic tofu burger is the perfect vegetarian/vegan alternative for the BBQ season. Tofu is a great source of protein and contains all nine essential amino acids. It's also a great source of iron and calcium, which is great for your bones, teeth, and blood.

Ingredients

2 packs of extra firm tofu (400g each)
vegetable oil e.g. veg, sunflower, rapeseed

Marinade

2 cloves of garlic, peeled and grated or crushed
1 thumb-size fresh ginger, grated

Method

1 Cut the tofu into 1 cm thick slices.
2 Compress the tofu slices: lay a clean tea or kitchen towel on a cutting board, place the tofu on top then cover with another clean tea or kitchen towel. Place a second cutting board on top with some weight such as cans. Leave for 1 hour.
3 In a shallow dish, combine the marinade and tofu slices, then add the tofu, making sure that sides of the tofu are well coated. Marinate for 30 minutes or overnight if preferred.
4 To cook, light your BBQ. If you are using charcoal, make sure they are fully lit and all the flames have died down. Remove the tofu out of the marinade and brush each side with a little oil. Place the tofu on the hottest part of the grill and cook for 2 minutes before turning. Cook on the other side for 2 minutes or until slightly charred.
5 Brush the sauce mix onto the tofu slices as a glaze before serving.
6 To serve, sandwich the tofu between slices of cucumber and mint leaves in soft buns, and topping with salad leaves.
