Spanish Tortilla

Serves 4

8 eggs
800g potato, peeled and cut into chunks
2 brown onion, finely sliced
2 Tbsp oil
a pinch  pepper for seasoning
1 handful of coriander leaves, finely chopped


1 In a big bowl, crack all the eggs in and add the caramelised potato and onion, roughly mush the potato, add in half of the coriander leaves and season them with soy sauce and black pepper, mix well. Set aside for 10-15 minutes.
2 Heat up the pan over medium heat with 2 Tbsp oil. Stir-fry the onion and potato cubes until they are nicely caramelised.
3 Pour in the egg mixture, cook them over medium heat until it is 80% cooked. Flip the tortilla with the help of a plate and cook the other side until it is fully done.
4 Put it on a plate and drizzle with some Sriracha Mayo. Sprinkle some coriander leaves before serving.
